HARVEST OF COFFEE CHERRIES WITH A MINIMUM BRIX READING OF 21. FERMENTED FOR OVER 240 HOURS IN SPECIALLY DESIGNED ANAEROBIC CONDITION VATS, WHICH ARE PLACED IN A TEMPERATURE CONTROLLED ENVIRONMENT. POST FERMENTATION, THE COFFEE WAS SHADE DRIED FOR 28 DAYS.
