Siolim Specialty Coffee Roasters was founded in 2022 in Indore, drawing its name and identity from the serene village of Siolim in Goa. What started as Indore's first specialty coffee roastery quickly grew into something larger. By 2024 the brand had launched the Siolim Barista School and established India's first co-roasting space, a shared facility where roasters, farmers, and enthusiasts come together to learn, experiment, and push the craft forward. At every step, community and quality have come before scale.
If one product defines what Siolim Coffee is about, it is their whiskey barrel aged coffee. Green coffee beans are rested inside premium single malt whiskey barrels before roasting, allowing the wood and residual spirits to slowly infuse the beans with warmth, complexity, and a smooth, lingering finish. The result is a cup unlike anything produced through conventional processing, one that reveals its character gradually with each sip.
Barrel aged coffee is a niche and growing category in Indian specialty coffee, and Siolim is among the few roasters taking it seriously. The Anjuna Blend takes its name from the iconic Goan beach and is designed as a smooth, versatile espresso blend. Medium roasted and well balanced, it works just as well in a moka pot as it does in a commercial espresso machine, making it an ideal everyday coffee.
Every Siolim coffee is sourced directly from small, independent Indian farmers, with complete supply chain transparency from farm to roast.
