Golden Drift Coffee | Humble Express

Fermented, not flavoured. Tastes like sunlight got involved. Most coffee ferments quietly — a day or two in a tank, just the cherry and its own sugars, before it's washed and dried. Golden Drift does something stranger. At Udaygiri, ripe cherries are sealed in tanks alongside pineapple, where the fruit's natural yeasts get to work on the sugars in both. As they feed, they release aromatic compounds — the same esters that give pineapple its smell — and those compounds work their way into the bean itself, long before it ever sees a roaster. Nothing artificial is added. No flavouring, no syrup, no shortcut. Just cherries, pineapple, time, and the patience to let fermentation do something unusual. The result is a coffee that carries that tropical character all the way through roasting — mellow caramel and soft vanilla up front, with a pineapple-like sweetness that lingers, unmistakable, into the finish. Grown at 4,200ft in the Udaygiri estate, this single-origin Arabica was selected specifically for this process — gentle enough in acidity to let the fermentation shine, sweet enough at the source to meet the pineapple halfway. Medium roasted to protect every note the fermentation worked so hard to create. Brew it black. This is not a coffee that needs help to taste interesting.
