Cold brew is one of the simplest ways to make great coffee at home, but bean choice matters more here than in almost any other method. Cold brewing extracts slowly over 12 to 16 hours without heat, drawing out different compounds than hot brewing and producing a smoother, naturally sweeter, lower-acid cup that rewards the right cold brew coffee beans more than it forgives the wrong ones.

Built by two-time Indian Coffee Champion Mithilesh Vazalwar and his Nagpur team, March Mellow is one of the few coffees in the Indian specialty market purpose-built for cold brewing. The light roast preserves the delicate sugars and aromatics that slow, cold extraction draws out over 12 to 16 hours, producing a mellow, naturally sweet concentrate with a clean finish. Serve cold over ice or store in a carafe or server for up to two weeks.
Making cold brew requires cold water, cold brew coffee beans, a coarse grind, and time. A standard ratio is 1 part coffee to 8 parts water by weight for regular strength, or 1 to 4 for a concentrate you dilute before serving. Combine coarsely ground coffee and cold water in a jar or cold brew vessel, stir to saturate the grounds, and cover before steeping.
