Originating from one of the highest growing regions in Tamil Nadu, these coffees are dense and have a beautiful aftertaste because of the high growing Region. The Laks farm is completely organic and devoid of any chemical pesticides and fertilisers. The coffees are intercropped with oranges, cardamom, pepper and banana. The beans of the highest brix are identified (colour coded bands are given to workers at the estate to pick the cherries). The selective cherries are picked and the floats removed. The cherries are pulped with minimal soil removal and are aerobically fermented for 12 hours. Post 12 hour fermentation they are dried under direct morning sun for 4 hours. Post this the mucilage laden parchment is moved to slow drying in raised beds under shade.
Being a high elevation coffee that has been grown and processed meticulously, this coffee was able to retain its natural sweetness and even some of the fruitier notes as dark roast. With notes of Caramel, red apple and a sweet aroma of winter spices, this dark roast breaks the mould of what is generally perceived as a dark roast.
