For this coffee, perfect ripe coffee cherries were hand picked, at the processing facility these cherries were hand sorted to remove any overripe or underripe fruit. 

These cherries were then placed in tanks and mandarin oranges grown at the same estate were cut and added to this tank, this tank was sealed and the cherries were left to undergo fermentation for 48hrs under the cool climatic conditions of shevaroys. 

After this, cherries were laid on the raised African beds where they were constantly raked every few hours and dried under the shade and sun for 27days.

Gemblary is home to Peacocks, Myna, Greater coucal, Racket-tailed drongo, Red jungle fowl, Indian Gaur, Wild boar, Civet, Dhole, Barking deer, and many more.
