Prior to drying, dark red cherries are hand picked, floated in water, and sorted to remove any under ripe or overripe fruit. The coffee was then laid out on raised beds under the shade for 25 days, during this time coffee was raked and turned around every few hours for an even drying. The aromatics are intense and sweet, bustling with notes of Apricot, Guava, Red Apple & Dark Fruits. This Coffee has a nice fruit tonal character. The mouthfeel is very smooth & sweet. Reminds us of Red Guava, Plum, Berries & Grapefruit in the cup. Sweetly low-toned in structure but a Buoyant Finish.
